Spring has Sprung

So I'm in full steam ahead with clearing and planting!  Pollen is pretty much gone, grass is getting green again, and fingers crossed winter is GONE.  I think it's a sign I'm really old that I can't wait to get home from work to work in the yard?!?  Anywhoo no shame hear I will gladly admit it.

Late last night I was in the backyard with Hendrix and moving around this old bird bath.  The Mr. thinks only old people have bird baths. 
Well we have one and we aren't getting rid of it I'm going to plant in it.  Something pretty that trails.

I also got this text from my Mr. yesterday..."look what we own"
Any early birthday gift for both of us from the in laws.  The Mr. has ALWAYS wanted a Japanese Maple.

I'm super pumped for all the projects piling up in my head but I'm going to try and not get ahead of my self.  We still have a lot of cleaning up to do!  Stay tuned.

Landscaping 2012

Well I'm sorry to say I only have 2 pictures to share.  Good news is I finally got a new memory card so I can start taking pictures on my phone again which insures more pictures in my posts.

We have successfully planed 7 camellias in the front yard bed we built last year.  Good bye half dying shurbs hello new pretty flowering shurbs!!  Very exciting.  The bed looks sparse but will be a working in progress.  So far we have th 7 camellias, several iris, 2 trailing rosemary (transplanted from last year's window box), 2 gardenias (1 at each end), and 2 acubas rooted from my mama's yard.

Early February I moved the 2 tree shaped rosemary bushes from our front porch pots and planted in the yard.  I added some winter with herbs and lettuce....
Lettuce, sage, chives, mint, and panseys.  I even had a salad from our front porch pots for lunch yesterday...it's so exacting to eat from you yard!

Tasty Tuesday....Best EVER Mac and Cheese

This pic is not a pic I took and/or this recipe but thought I had to share a pic to make a pretty post :) .  I found it on pinterest of course.

So I have to share my most favorite mac and cheese recipe. I can’t find the source online but my mama cut it out of the AJC several months ago. I now have it memorized and made it last night. The Mr. and I can almost eat the whole recipe in one sitting.

Best Ever Mac and Cheese ( I think that’s what it’s called)

2 cups of Elbow Pasta
1 cup Mayo (low fat is just as good…and Duke’s is the best)
1 can of Cream of Mushroom (last night I did celery and I think I liked it better)
1 pound of Extra Sharpe Cheddar (best if you shred it yourself)
1 tablespoon of Diced Onion
1 tablespoon of Pimentos
20 Ritz Crackers (crushed)

Preheat oven to 325.
Cook Elbow’s until al dente
Mix Mayo and Cream of [your choice] until blended
Add Diced Onions and Pimentos
Then Add shredded Sharp and Pasta
Spread into a 9 x 13 greased baking dish and spread with Ritz Crackers
Cook at 325 for 45 mins

Seriously best ever!!!

Spring Forward


Wow how time has flown by but we have been busy! This time change is killing me, losing an hour + 2 rainy days in a row is making me very sleepy. 

Sorry I still don’t have any pictures of the new plants. I haven’t been home without it be dark and/or rainy sent we have planted. Well that’s a lie, Sunday we had PJ day. Yes that’s correct, our company left around 2 in the afternoon and we didn’t get out of our PJ’s all day. It was absolutely fabulous. We watched our team (one of them) win the ACC for the first time ever!!!
The whole family went the game except for me. I was ok though because I’m very superstitious and I didn’t go to the first 2 games and they won so I didn’t want to throw things off.

We also have the Mr.’s beer thing…Brew Your Cask Off, Saturday. The whole family (everyone over 21) was able to attend. He had great support from our friends and family! Thanks to everyone for coming and voting. He didn’t win but we all had a blast.

This week is full of a little recovery time and planning. We have a lot coming up in the next several months and we are trying to make the most of the time we get together. Hopefully this includes some planning for some down time, taking pictures, and a little blogging thrown into the mix.

Tasty Tuesday...Sour Cream Chicken Enchilladas

Today I'm joining 33 Shades of Green's Tasty Tuesday!  And finding some great dinner ideas!

Yum so I found this on Pinterest from Centsational Girl.  Definitely should have used low fat sour cream regardless it was delicious.


I cut everything in half since it's just me and the Mr.  It was perfect enough for only 1 night of leftovers.

Simple Sour Cream Enchiladas



Ingredients:
4 chicken breasts, fully cooked & shredded
2 dozen white corn tortillas - I did a really terrible job making my shopping list and got flour instead, still worked great
1 16 oz. can green enchilada sauce
2 ounces additional green chiles - Forgot these too, so subed with additional green enchilada sauce
14 oz. sour cream
4 cups shredded cheese (Jack or Mexican blend)
 
Mix all ingredients together, reserving 1.5 cup cheese, 2 ounces green chile sauce, and 3 ounces sour cream for topping.  Heat corn tortillas 4 or 5 at a time in microwave on high for 30 seconds, then spoon 3 tablespoons of the mixture into the heated tortillas.  (Heating them helps avoid cracking when you roll them up!)  
 
Spray a large Pyrex or glass dish with cooking spray (you may need an extra dish), then align enchiladas in a row inside.  Blend remaining sour cream and green chile sauce together and spoon over enchiladas.  Top with remaining shredded cheese.
 
Cover with aluminum foil and bake in oven for 30 minutes at 350 degrees.

Makes 20-24 enchiladas.

Garnish with fresh cilantro (which I didn’t have) and if you like spice, extra green sauce.

Insert Clever Title

Sorry wish I had a fun title but I've got nothing...Monday brain.

We survived the storms in the south with a big pizza pie and beer. It was a very nice little weekend, a bit chilly and a bit windy but relatively relaxing. We were very lucky and my prayers are with those who were not. 
Saturday celebrated my daddy with a nice steak dinner and basketball games.  Thanks for all you do Daddy! 

A little late but last week the Mr. and I enjoyed ‘Act of Valor’ for our weekly date. It was so amazing. You all have to see it, I have a whole new respect for the Navy and their families.

In very exciting news camellias were purchased and planted!! They look very pretty and I’m so exciting that the flower bed we built last year is finally taking shape. We didn’t finish until it was dark so tomorrow I’ll have pictures to share. The Mr. worked at 7am yesterday and came home at 6pm and started digging holes. Isn’t he just the best!

The living room is as complete as it is going to be for a while. I have a few odds and ends to pick up but for now it’s complete. Again I promised to have pictures to share this week.

Happy Monday, it’s a busy week in our bungalow getting ready for a busy weekend.

March 2012



I’m fist pumping for March! Oh and it’s Friday that’s exciting too! We have so many fun things planned.

This weekend is my Daddy’s birthday! I’m going to make my first attempt at Bread Pudding with Bourbon Sauce, his fave. If you have any great recipes please let me know.

Next weekend is double the fun….Brew Your Cask Off at Sweetwater, featuring a brew by the Mr.
Plus the ACC Championship and the beginning of March Maddness!  Love it!


We get a weekend to catch up then it’s off to NOLA for the International Beer Festival with our besties!

The next weekend I get to visit my Grandaddy at one of the prettiest places on earth Abingdon.

Now you can see why I’m fist pumping!
